Healing Bone Broth

This recipe is an excellent way to get the most out of a roast bird. You can give your roast chicken or turkey a second life by using the bones to make a broth. The trick is to save the carcass and any additional bones, scraps, and drippings in a freezer safe bag. Then, when you're ready to make the broth, you just pull the bag out of the freezer and place the contents in a large stock pot. Mirepoix - a trinity of chopped carrots, celery, and onion - provides a flavorful base to any broth. Ginger, garlic, herbs, and spices amp up the flavor and nutrient content. Bone broth is also rich in protein, including collagen protein, which benefits our skin and joints. The broth can be portioned and frozen for later use.
